Serenity by Coconut Bay in St. Lucia Plans 2020 Expansion

It’s only been open for about a year, but luxury all-inclusive resort Serenity by Coconut Bay in St. Lucia is already planning an expansion.

Mark Adams, CEO of Serenity by Coconut Bay, a 36-room boutique hotel that in opened in June of last year, told TravelPulse the resort plans to add between eight to 16 Grand Plunge Pool Butler Suites by next year.

Although the number of rooms isn’t significantly high, the importance of the expansion lies in the dramatic increase of the resort’s most popular rooms. There are currently eight Grand Plunge Pool Butler Suites and they are usually the first to be booked, said Adams. The planned expansion would at least double the inventory of the resort’s top selling category.

Adams said the additional Grand Plunge Pool Butler Suites will be available for booking as early as the fall of 2019 and will be fully operational as early as the winter of 2020.

Like the current Grand Plunge Pool Butler Suites, the new rooms will include televisions at the end of the beds that rotate up and down, large plunge pools that get a generous portion of light, a full outdoor bar and an outdoor gazebo.

Adams also mentioned there are planned upgrades for Serenity’s sister property, Coconut Bay Beach Resort & Spa, slated for September of this year as well as September of 2019. Adams, however, could not share more information since the details are still being confirmed.

Serenity’s focal point, the Serenity Pool has a 1,000 square-foot lap pool at its center and a separate whirlpool at its south end. The two-tier design features 24 in-water ledge loungers framing the lap pool while luxurious lounging options out of the water include six private pool cabanas.

As far as dining goes, the Greathouse Restaurant offers guests a menu of Caribbean-inspired cuisine in a romantic St. Lucian mansion in a modern setting. The 10-seat Chef’s Table at the Greathouse Restaurant celebrates the island’s creole cuisine and will be prepared by celebrated local chef Aunty Debbie.
